Ingredients

For the Sausage Meatballs

  • 1 pound Italian sausage mild or spicy, depending on your preference
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Pasta and Sauce

  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 can 28 ounces crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional, for a bit of heat
  • 12 ounces pasta penne, fusilli, or your favorite shape
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil chopped (for garnish)

Instructions

Step 1: Prepare the Sausage Meatballs

  • In a large mixing bowl, combine the Italian sausage, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper.
  • Mix the ingredients thoroughly until well combined.
  • Form the mixture into small meatballs, about 1 inch in diameter. Set aside.

Step 2: Cook the Meatballs

  • Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  • Add the meatballs to the skillet and cook until browned on all sides. This should take about 5-7 minutes.
  • Once browned, remove the meatballs from the skillet and set them aside. They do not need to be fully cooked at this stage, as they will finish cooking later.

Step 3: Prepare the Sauce

  • In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  • Pour in the crushed tomatoes and broth, stirring to combine.
  • Add the dried oregano, dried basil, and red pepper flakes (if using). Stir well.
  • Bring the sauce to a simmer.

Step 4: Cook the Pasta

  • Once the sauce is simmering, add the pasta to the pot.
  • Return the meatballs to the skillet, nestling them into the sauce and pasta.
  • Cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the pasta is al dente and the meatballs are cooked through.

Step 5: Finish the Dish

  • Stir in the heavy cream and grated Parmesan cheese, making sure everything is well combined.
  • Cook for an additional 2-3 minutes, until the sauce is creamy and heated through.

Step 6: Serve

  • Garnish with freshly chopped basil.
  • Serve hot, with extra Parmesan cheese on the side for those who love an extra cheesy touch.
