  • 1 teaspoon ground cumin optional
  • 4 cups vegetable broth
  • 1 cup coconut milk or heavy cream for a richer version

Preheat the oven: Set your oven to 400°F (200°C).

    Roast the pumpkin:

    • Toss the cubed pumpkin with 1 tablespoon of olive oil, salt, and pepper.
    • Spread the pumpkin evenly on a baking sheet and roast for 25-30 minutes, or until soft and golden. Stir halfway through.

    Sauté the aromatics:

    • In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat.
    • Add the chopped onion and sauté until soft and translucent (about 5-7 minutes).
    • Stir in the minced garlic, cinnamon, nutmeg, and cumin (if using), and cook for another minute.

    Blend the soup:

    • Add the roasted pumpkin to the pot with the sautéed onion mixture. Pour in the vegetable broth.
    • Bring to a boil, then reduce the heat and simmer for 10-15 minutes.
    • Use an immersion blender to puree the soup until smooth (or transfer the mixture to a blender in batches).

    Add creaminess:

    • Stir in the coconut milk (or heavy cream) and cook for another 5 minutes. Adjust seasoning with more salt and pepper if needed.

    Serve:
